Found out why sometimes my pork items are so salty tasting. Seems a lot of meat packers are enhancing pork items with a sodium marinate while in the cryovac. While in cryovac they are marked "enhanced with percent solution" When out of the cryovac many times the package is not marked. You can tell pork which has been enhanced by a sheen or shine to the cut surfaces of the meat. Suggest not using salt in your rub if the meat is enhanced. This solution is supposed to make the meat more tender but adds up to 12% to the weight. In my book that makes the meat more expensive than what the lable says. "Swift" products are not enhanced.
