Rubbery ribs????

Last two slabs of st lois ribs ( from aldi) turned out rubbery. Did pretty much 3 2 1 at 250-275 degrees. Would you say these were undercooked?? Maybe just a batch of bad ribs? Usually my baby backs come out real tender. Am i missing something here? Cooked them on my kettle. Thanks. This is the second rubbery slab Good pull back on bones

No. Not enhanced. Said all natural

They look pretty darned good to me. Did you probe test them for tenderness?

Probably a little undercooked. They look good though

No i probably should have. They bent pretty good and bone exposed plus 6 hrs. I guess there done when theye done
