I stumbled across a rub that I think is worth sharing. I don't really love "Mr. Brown" so perhaps others who don't might like this one as an alternative.
"Pushmi-Pullyu" (from the book Where there's Smoke there's Flavor)
Note – Makes enough for one pork butt; use half to marinate overnight, reserve other half to apply before smoking
- ¼ cup paprika
- 3 Tb course ground black pepper
- 3 Tb chili powder
- 3 Tb ground cumin
- 3 Tb dry mustard
- 2 Tb dark brown sugar
- 1 Tb ground cayenne pepper
- 1 Tsp salt
I have read many threads about how it is pointless to use dry mustard in a rub or how paprika contributes nothing, etc.
Maybe that is all true. I'm no expert on how all the ingredients interact. What I will say that this rub makes some tasty pulled pork!
