Rolling ribs ?

I am cooking ribs for a charity event and wanted to maximize space. I am trying the rolling method for the first time and wanted your thoughts.

I am going to get atleast 3 racks, rolled on each grate. To ensure the ribs are evenly cooked should I pull the bootom racks earlier than the ones on top or simply foil and swap positions during this stage? Hope that makes sense.

I am doing these on my 18.5 WSM BTW

If you are not using water in the pan (just foiling) the bottom grate will be hotter than the top grate and you will need to pull them off first or rotate them to the top.
 
When I cook ribs on both racks,I like to swap the racks (top ribs to bottom and vice versa) about halfway through. Not sure if it helps or is nessecary,but it makes me happy!
