Our son, Michael and his girlfriend, Nicole stopped in on spring break from the University of Virginia and wanted some BBQ. So we decided on lots of wings and thighs. No leftovers here, they will be vacuum sealed and sent with them for their road trip back to Virginia.
Marinated one package of wings overnight in Louisiana Hot Sauce and then dusted them with John Henry's Jalapeno rub and *** Kickin Hot Habanero Salt. Michael always said there wasn't anything to hot for him, so without him knowing it, I spiced up a couple with just a wee bit of Ghost Chili Powder
.
For the rest of the family who doesn't like the hot stuff, marinated another package of wings overnight in Mr. Yoshidas and teriyaki sauce. Dusted with some Yardbird Rub.
A package of Chicken thighs were added to the mixed, marinating them overnight in raspberry vinaigrette and then dusted with Southern Delight.
Wings were put onto the ROL with some Tobasco flavored oak chips. Temp stayed steady at 400.
Thighs went onto the WSM with some apple chunks. Was able to maintain a constant temp of 350, with just all the vents opened. No water pan, just let the thighs drip onto the coals.
It was a great day to be outside with the temperature at 4:30 a nice 77.5!
Bev, my wife, just got home from work, was checking out the mighty aroma coming from the smoker and the grill.

Chicken is done. No sauce added.
Let's Eat!!!! Served with homemade potato salad, coleslaw, and baked beans.
About half of the chicken gone! Plenty left for a midnight snack or breakfast!
One fantastic meal and lots of fun. First time Michael and Nicole have been here since Thanksgiving, so wanted to make them a memorable meal. And by the way, my joke with the ghost chili backfired on me and that is all my burning mouth is going to say about that!!
