Roadside chicken marinade

Cooking some Roadside for Labor Day.
what would be the max time to marinade the chicken in the mix. I left oil out of the marinade .
Need to start cooking chick about 9 am tomorrow.
I have the "juice" already made and was just wondering how an overnight marinade would work?

I've marinated >2 days & also just a few hours - longer is better.

I have had the best RS chicken when marinating overnight.

I always try to do overnight but 8 hours works also.

Jerry, why would you leave oil out of the marinade? It's an important ingredient.
I always marinate using the oil with no problems.
I would have thought it's the vinegar you'd have to be concerned about during long marinate times due to the acid in the vinegar.
I ussually marinate meat about 9pm for an overnighter to be used for dinner time next evening.

My longest Roadside chicken marinade is 23hrs, with oil. It was absolutely fantastic and a whole lot better than an 8 hr marinade.

i always marinade w/o oil but baste with oil

How do you cope with the massive flareups using oil in the marinade, or am I the only one with big flareup- problems?

I always marinate with oil included and make up another batch for the marinate for basting.
Yes you will get a few flare-ups..just close the lid and wait for it to die..it doesn't really last too long..in fact I don't think I'm alone having fun chasing flames
