Dan it's been covered a lot, which for me makes it harder to find the information. Basically, my understanding is that if you have "continuously variable" valves, you can get away with just swapping orifices, but if your valves are "high medium low" then you have to change out the valves too.
That said, I HIGHLY recommend swapping manifolds for conversions because I'm not a plumber. I plumb sometimes, but I am not trained and gas that you are going to light on fire on purpose can be dangerous.
 
I agree a manifold swap when possible is the proper way. I read a bunch of posts before I chose the path I took
