Rich's Mexican Hash

With some leftover roast beef, I came up with this for dinner last night. Other recipes may have similarities, but this is entirely my own. The proportions were set by how much beef I had.

The leftovers from this meal were great for breakfast when lightly reheated in a pan before breaking some eggs in with it. Turn for over light/medium eggs.

Potatoes and veggies started.

Mexican Hash

Vary proportions as desired for more or less heat or different mixture.

3/4 cup Roast beef/brisket chopped
3/4 cup Potato chopped
1/2 med Onion chopped
1/2 cup Red/yellow pepper chopped
1 lg Jalapeno chopped
1 l g Garlic clove diced
1/2 cup Tomato fresh/canned chopped*
1/2 cup+ Shredded cheddar**
1/2 tsp Cajun spice
1/2 tsp Chipotle powder***
1/2 tsp Chile powder
1 tsp cumin
1/2 tsp Coriander
1/2 tsp Oregano
1/2 tsp Salt
1/2 Fresh ground black pepper

*Add to pan before finish to heat
-Substitute drained chunky salsa if desired
**Topping while hot after cook
***Substitute other pure chili powder like Ancho if desired.

Heat potatoes til par, mix in onion then add other veggies til soften, add garlic. Stir in spices, add beef until hot. Mix in tomato then top with desired cheddar. Eat.
