ribs were great then BAD

Hi cooked up some beef ribs on the WSM! did the 3,2,1 type! they were fantastic as in flavour and smell, the meat fell off the bone! had 2 ribs left that I kept for the next night, so my wife could try! I foiled them & reheated them on the weber Q for 20 mins! But they had a real bad FATTY taste, I could not eat mine and my wife was not impressed! did I do somthink wrong? or should they only be cooked once?

Sean i would of took them out of the foil as i removed them from the fridge let them sit for about a hour & reheated them with out foil at about 275-300 just to warm them up.

I don't re-heat mine in foil. I brought them to a party one time and smoked them with the dry rub then stored them in foil overnight in the fridge. Next day I took them out and sauced them then heated on the grill. Came out great. Maybe it is the trapping of the fat in the foil that is not working so well with the beef during the re-heat?
 
I've found that foil can start to break down when wrapped around BBQ for an extended period. I think it's either vinegar and/or salt that does it. It definately can leave a bitter taste on the product.

I strongly recommend using a zip-lock bag for short term storage. It keeps the good stuff in, and the bad stuff out. Re-heating is via some type of low heat oven. Never a nuke.
