Brett-EDH TVWBB Olympian Nov 16, 2024 #2 I’d say add moisture. It’s cracking because moisture is leaving the ribs and they’re shrinking. But they’re still going to shrink when you cook them as moisture must leave the ribs to cook. So a small water pan would be my suggestion.
