Ribs and a Brisket today

I've got a 12lb cryovac wholesale cut brisket that I didn't trim on the bottom rack, and 9lbs worth of spare ribs on the top. I am keeping the temp around 225. What would you expect this to take timewise? I'm guessing 5 hours for the ribs and 10-12 for the brisket? Does that sound right?

That's lots of meat! Where are you holdng the 225?, grate level or dome? That will make a huge difference.

I always cook my spares for around 8-9 hours at those temps(as measured at the grate). Brisket most likely will take closer to 1 1/2hrs/lb. Hard to say though, they all cook a little different.

Use the fork test on each of these cuts....plunge it between the bones on your ribs(should slide in and out easily) and stab the flat portion of the brisket and give it a good twist.

I'm taking 225 at the dome. I usually try for 250, but I'm trying 225 for a change. The ribs are already done and turned out great. The brisket is still on, going on 7 1/2 hours now. It poured hard, but I bought myself a 10x10 Ez-Up Express III yesterday and that kept the rain out pretty well.

When you figure 1hr/lb for ribs, do you figure the total measurement of the whole package of ribs? Because after you cut them up, each section only weighs a pound or two...

I've never weighed my ribs...I can tell from looking at them how long they will take. The spares I cook are always much bigger than the backs I cook, hence the longer time.

Glad all came out OK!
