Thanks to all the good information I have read here I was able to do a pretty good smoke on some spare ribs. I am currently still saving up for a WSM, but I was able to take a lot of tips here and modify them for smoking using my Weber Genesis 1500 gas grill. The only problems I had was wind playing havoc with the grill prompting me to move it from the patio into the garage, and the common foil (from what I have seen here) of a little too much salt in the rub. Still, the ribs turned out to be some of the best I have ever done. Thanks again for all the great info and advice on this site!

Salt is needed in rub to draw the flavors into the meat. With ribs where you have a lot of surface but very little mass apply rub only a couple of hours in advance and go lighter with the rub.

Reading your post was deja-vu all over again.
I learned about salt the hard way - numerous times. I had a heck of a time maintaining smoke/constant temp with the Genesis, but I eventually figured it out.

If you think the Genesis produced good ribs, wait until you get the WSM.
