Rib tips


 
Sorry for the lack of action shots, just forgot and then it was cold and windy. I cooked my trimmings from a full rack of spares that I did on Saturday. I rubbed it down with homemade rub on both sides and cooked the meat with pecan at 250 for 3 hours with the last hour foiled with apple juice. I also made some garlic and onion mashed potatoes and a salad.

Sauced with homemade SC mustard sauce.

First time doing this and it ended up great, a full meal for two people!! Better than throwing it away!!
