Pork

Hello guys, I am trying to get recipes for pork ribs since I have been cooking them with indirect heat and only adding sea salt the night before cooking them. I am from Mexico and would like to know , how do you call these types of ribs shown in the link above?? By knowwing the difference I will be able to search the forums for recipes for this kind of ribs

Thanks

I clicked the link and saw what looked like cured ribs. Get some chili powder and other spices to make a rub. Garlic, onion and others make for some tasty pork.

They look like boneless pork spare ribs. (I guess they are boneless?)

Individual ribs, rather than a rack.

You could also consider it as pork belly strips.

Thanks a lot guys, I have confirmed these are spare ribs...in Mexico is not usual to sell the whole rack, so I will start with this kind first.

Thanks again

"Costillas (de cerdo)" could refer either to spare or baby back ribs. It looks like in that photo the ribs are spare ribs that have been cut vertically between the bones.

Thanks Dave that is exactly what they are, after looking at them for a long time I could not figure it out but the wife saw that immediately. Thanks
