Rib prep question

Ive done a few smokes so far, and in order to fit several slabs on at once, ive rolled them and have used a rack. Rolling was a little bit of a pain and a rack is just another thing to clean. Is there anything wrong with just cutting the ribs in half before tossing them on the smoker? I know it may not be good for presentation, but trust me, the people I make them for just care about how they taste.
 
You can.....the only thing is you may sacrifice some meat by having addition ends.

Go with what works ( I agree with the racks as they are a pain to clean)...I still roll mine on skewers
 
Steven. I do that all the time. I'm usually smoking about 20-25#'s of Spares when I do a smoke. Between the ribs and trimmings it seems every square inch is taken up.

Me, and most of the people I cook for, like the drier ends so cutting racks in half isn't much of an issue.

Think of it this way, smaller racks means more bark.

IMO, the biggest downside to the wsm, is figuring out a good way to cook lots of ribs. I haven't found a good solution, if you find one, let me know!
