Rib eye roast

I'm smoking a rib eye roast on the WSM. I plan on giving it about a ten minute sear to finish, foiling and resting for at least half hour. At what temperature should I pull the roast to end up with medium rare after the sear and rest?

~135 usually works well for me. It should gain 5-10 upon rest. A nice slice can always be cooked a bit more, never a bit less is my old rule.

Dave, hopefully it's not too late but if you want to end up with medium rare, I would probably pull it around 125. Like Don suggested, the temp. will increase by a few degrees and medium rare I believe is somewhere around 130-135.

Erik, I hear you. I didn't think I'd get a big boost during rest because I smoked the roast at 250 lid temp. What I did do was when the meat got to 125 I opened all bottom vents and the cooker fairly quickly went up to 325-350. I left the meat on for 5 minutes or so, turned it over for 5 minutes then brought it in the house and let it rest under foil for what ended up being about a 45 minute rest. It was fantastic and just the way my wife and I like it, nice and pink

Dave, Gald to hear it turned out great for you. The Eye O round is one of my favorite cooks on the kettle beside steaks and the RoadSide chicken. I'll have to try one on the WSM soon.

Dave,

How big was that rib eye roast? I love ribeye steaks, those are my favorite cut right now. But, I've only seen the full roasts at BJs and they are like $90-$100, but they are a lot of weight too, I forget exactly how big.

From BJ's, they had a few smaller cuts in packages
Dave

Ah, ok, not one of those huge packages next to the briskets then. I've been thinking about doing one of those huge ones for a family gathering, but I'm too scared to spend the money yet
