just wondering if wrapping tightly with foil and letting rest breast down in a cooler will make the skin less crispy

this is assuming i can get it crispy in the first place (my goal)..wouldnt want to steam it back soft

and when applying the herb butter do you leave it out to soften (its already mixed and back in the fridge)

thx as always..once again this site has basically walked me thru my cook

I let mine rest for 15 - 20 min uncovered. No problems with skin getting soft. If you want you could place it on a wire rack so the skin isn't laying in the juice. Just curious why the cooler for resting. Yes let the butter soften. Bryan

If your goal is to do the turkey way early and put it in a cooler to hold it, you'll have soft skin. If you can plan it so you're not resting the turkey more than 40 min you can tent it instead of wrapping it tightly and the skin should stay crisp.
