Reheating By Boiling Vacuum Bags

Not my preferred method of reheating but my fishing partner needs to feed some clients while I'm at Shannon. 4 bags of ribs (5-6 bones each) and 2 bags of pulled pork (enough for 2-3 sammies each). They will be thawed. Approx time to get up to safe temp?

20 min, usually, tops, from near-frozen if the mass is thin. Normally I toss a bag into boiling water, cover the pot then shut the heat off. If he's doing them all at once in the same pot then I'd suggest leaving the heat going and covering the pot and leaving it alone for several minutes till the water returns to a good simmer (180). Then the heat can be lowered to a gentle simmer or simply shut off, left covered. The packs should be hot in less than 10 from there.
 
Be carefull not to place in rapid boiling water, or you could end up with rib soup. It needs to be gently simmering just to be sure it doesn't split open at the seal.
