Red Hot & Blue Potato Salad

I apologize for this, but I think Red Hot & Blue does potato salad exactly the way I think it should taste.

I was wondering if someone has a similar recipe, or even suggestions as I couldn't find anything focusing on their potato salad by searching the board.

I believe I found this on CopyCat or TSR years ago.


Red Hot and Blue Potato Salad

8 red potatoes, washed and unpeeled
1 cup Hellman’s mayo
1/4 teaspoon celery salt
1/4 cup chopped fresh chives
dash of mustard seed
4 hard boiled eggs
salt and pepper to taste
Paprika, optional

Cut potatoes into quarters. Boil until just tender, drain, and cool to room temperature. Combine mayo, celery salt, chives, and mustard seeds Dice 3 hard boiled eggs and stir into mayo mixture. Pour over cooled potatoes and toss gently to coat. Adjust seasonings with salt and pepper. Garnish with slices of the reserved hard boiled egg. Dust with paprika.
