Red beans and rice

Pretty much what the title reads. Confess that most of this was done indoors; put it in the Genesis for about 2-3 hours at low temps.

Couldn't find a ham hock so I browned some ribs. Only two of them went into this cook.

Then browned some andouille and added the holy trinity.

I'd soaked 1lb or red beans overnight in salted water. Drained and into the mix. Added 1qt homemade stock and about 1qt water.

Moved to the Genesis and let it roll for about 2-3 hours, stirring every so often. Honestly, I use Minute Rice when I make this dish which is weird, because I make good rice all the time. I think I just like the texture...evokes childhood memories, lol.

Have you ever tries Louisiana Hot Links instead of Andouille? Kicks them up a couple of notches!
