JimK TVWBB 1-Star Olympian Jan 1, 2012 #2 Probably late on this, but salt, peper and some dried sage should do it. Put some fresh herbs and citrus in the cavity - maybe under the skin too. Let us know how it turns out.

J James H TVWBB Pro Jan 1, 2012 #3 Thanks Jim, I went with some italian herbs and rosemary. I came out very nice. Smoked at 350...took about 2.5 hours. Skin was very edible and meat was tasty. I would like to try injecting next time.

Ray Spanish Spice Rub 3 TBS Spanish or regular paprika 1 TBS ground cumin seeds 1 TBS ground mustard seeds 1 1/2 TSP. ground fennel seeds plus ½ TSP whole fennel seeds 2 TSP. coarsely ground black pepper 2 TSP. kosher salt

Gary S TVWBB Guru Oct 2, 2012 #6 Now that this forum is open again I have made up a few batches of the Simon & Garfunkle rub. It's great with Poultry and my guess is it would make a great breakfast sausage seasoning as well.
