Recent Spares cook

I decided to smoke some spares over the weekend vs. my normal babybacks.

I used my standard rib rub that my family loves and increased the cooking time about 2 more hrs.

I trimmed them st. louis style which REALLY improved them at the dinner table. I dont mind all the extra work for a non-trimmed spare rib but my family does.

I smoked for 4.5 hrs, foiled with apple juice/vinegar/water mix for 1 hr, another 30 mins smoked then sauced over direct heat for 10 mins or so.

Best Spares yet. Just thought I would share. I should have taken a pic. ah well.

Care to mention what's in your rub??

Like you, I typically go right for the babybacks as well.

Lately I've been thinking about going back to the spares - just might have to for my next smoke!
 
My rub consists of a combination of two commercial rubs:

The Squeal Hog Rub
Jim Baldridge's Secret Seasoning

I forget the %...but more hog than secret.

I tend to add a bit of paprika, black and white pepper as the above combo is a bit salty to really lay it on thick...so I go easy on it and add extras.
