1 large egg
1 1/2 c. buttermilk
5 t k salt divided
fresh ground black pepper
2 lbs chicken tenders
In large bowl, whisk egg, buttermilk. 2 t salt and a few grinds of pepper. Add chicken, cover and fridge at least 2 hrs or overnight.

2 1/2 c. AP flour
1/2 c. cornstarch
1 1/2 t paprika
1 t garlic powder
1/2 t onion powder
veg oil for frying
Into a large heavy pot add 2" of oil and heat to 350
Working one at a time, remove chicken from marinade, letting excess drip off. Toss in flour mixture, then repeat by dipping in marinade and tossing in flour again.
Fry until deeply golden, turning occasionally for 3-4 mins. You want 165 int.
Transfer to wire rack set over a paper towel lined baking sheet.
Canes sauce.
3/4 c mayonnaise
3 T ketchup
1 t worcestershire sauce
1 t garlic powder
3/4t freshly ground black pepper
1/2 t k salt
1/2 t onion powder.
Stir all ingredients' together and chill.
Made this last week with crinkle fries. We liked it .
