Adam and Regina... There's a few on YouTube. Do a search for Chine bone. I just flipped the rack over and probed with my fingers at the base of each rib. You should feel them easily. I just gently cut around them and carved them out. Wow, what a difference slicing the rack.

Anybody have a good video on removing the chine bone... i picked up one of these for new years eve. I started thawing it out in the fridge last night and im pretty sure its still fully intact.

Exactly my question also.
 
Cliff what was the ratio of your brine ingredients. I want to do this for new years day. Hopefully you can answer tonight.
