I noticed Chris had stuffing (maybe aromatics?) in his bird on the step by step example. Is this required?

I am using a 7% turkey. DO I need to brine? WOuld it help?
 
No it's not required. And yes brining will give it great flavor. Time to get busy Bud.

The aromatics are optional, put whatever flavors you like in it.

Brining will definitely help and it is okay with the 7% bird. It should be around 300mg of sodium, right? You can use the brine recipe as is and it will be fine. Or if you are worried about the salt you can cut back a tad. I did a 7% bird last weekend and cut the salt by 1/3.
