just a quick question for some or you experts. We are having an early thanksgiving this weekend so I plan on smoking a turkey. The weather is supposed to fairly cold I was wandering at what temperature should I start to consider insulating my 22.5 WSM.

For those who are looking for a cheap food grade plastic bucket. I have discovered that Fire House Subs sells their old 5 gallon pickle buckets for $2.00. Not sure if this restaurant is nation wide but its a good tool and the $2.00 goes to a good cause.

Great tip on the buckets, Drew! Delis and sandwich shops are a great source for free or cheap buckets. Some restaurants receive sauces in buckets. Some ice cream parlors receive toppings in buckets. Don't be afraid to ask...you might be doing them a favor by taking 1 or 2 off their hands!

As for your question, you really need to be worried about wind, not so much the cold temp. If you can move your cooker into a spot where it's not directly in the wind, you should be fine. Or if you can block the wind by placing the cooker behind something, like behind a gas grill or behind a vehicle in the driveway or behind a sheet of plywood.

Wind is the enemy

Good luck!
