Quick chicken thigh dinner and MOINK ball appetizers.

Tonight I made a quick chicken thigh dinner with a green bean casserole and pineapple.
We had a bunch of leftover meatballs in the freezer so I tossed together some MOINK balls for an easy appetizer.

I skinned and deboned the chicken so it would cook a little quicker. I used a rub that I got at an amazing butcher shop in Sidney Ohio, and I docktered up the barbecue sauce with some of my dry rub and a few shots of Seagrams. I cooked everything indirect at 350 with Weber's charcoal.

My new neighbor asked me if I was crazy for grilling in this cold. It was 37 degrees, what's he going to think when it's -5. He did come back after about half an hour with a beer for me. He was dying to try the MOINK balls. He wasn't disappointed:D
 
Let's see, a Moink Ball for a beer... that's a pretty good exchange. Terrific looking cook Mark. We've got about the same temps going here tonight but at least we don't have that -5 stuff to look forward to. At least, I don't think so!
 
Looks like a great meal there. We've had really nice weather here high 60s and mid 40s at night, but that ends today old man winter is here, mid 40s and mid to low 20s at night going forward.
 
Chicken and Moink Balls that's the way to go. I'll pass on the beer for a glass of wine. Awesome cook Mark.
