Tonight I made a quick chicken thigh dinner with a green bean casserole and pineapple.
We had a bunch of leftover meatballs in the freezer so I tossed together some MOINK balls for an easy appetizer.
I skinned and deboned the chicken so it would cook a little quicker. I used a rub that I got at an amazing butcher shop in Sidney Ohio, and I docktered up the barbecue sauce with some of my dry rub and a few shots of Seagrams. I cooked everything indirect at 350 with Weber's charcoal.
Sorry for no plated pictures, I was way to hungry.
My new neighbor asked me if I was crazy for grilling in this cold. It was 37 degrees, what's he going to think when it's -5. He did come back after about half an hour with a beer for me. He was dying to try the MOINK balls. He wasn't disappointed
