I'm not sure if this has come up here before or if this technique is new or not, but pulling pork right off of the smoker can be a painful experience. I know some folks use a couple of forks, but I prefer good old fashioned pulling by hand. The downside to this is, it's VERY hot right off of the smoker.
I usually let my butts cool down for an hour or so before pulling, but in a recent contest that simply wasn't an option. We had to pull 3 shoulders in a real hurry (had to foil them to get them up to temp in the first place, very windy).
What I ended up doing, was slipping our plastic food-prep gloves over my insulated jersey gloves (it was pretty cold out), and pulled all 3 butts in record time (about 20 minutes total) with no pain. This worked so well, that now I do this at home, just to speed the entire process along.
Thought I'd share with y'all. Sorry if this was a tried and true technique that everyone already knows about.
