Pulled out 6lb Brisket point

She's all trimmed up (bought that way from my little shop here in the village), Wife had vacuum sealed it and I stuck it in the deep freezer. Looks like a decent weather wise weekend coming up, I think it's gonna go in Big Z for an overnight sauna, and likely make up some of this weekend's dinner(s). Yum :D We'll slice and vacuum seal portions as well, for those cold blustery I don't want even put a toe outside kind of nights but just hankerin' for some Q

OK, got the grill fired up a little prior to 7. Right about sunrise. Pulled the brisket. Did a slight trim. I think right now it's at 5.8 to 6 lbs. (I did not weigh after the little trim but it was 6.2 prior).
Current way it's going. BIg Z is rolling coal at 230, one Chef IQ says ambient is 226, and the other says 190. This is to be expected based on where in the roast they're placed. But, BZ is maintaining 226 to 234 easily. Cool temps no wind currently.
Sorry no intentions of opening the lid until I'm over 195 internal

Sounds like a wise plan! I have learned to just leave things alone until temperature is “almost” done! Especially when it’s not terribly pleasant weather.

Actually given it's December it's a VERY pleasant day. Yeah, I wait until it's about 195 and then I do a test probing, Though my past cooks tell me 202-210 are the "magic". But, I just won't even lift the lid until probes are nearing 200.
I see all these others out there, "oh pull it wrap it with tallow, put it in a pan with broth, yadida yadida". I just let it "roll" and it's not failed me yet.
 
Just like my childhood at Christmas time, I peek at my protein. I enjoy seeing the progress.
If it's summer not so bad. But pellet grills (especially one as huge as my Z) lose an incredible amount of heat simply lifting the lid. And in winter take an awfully long time to build back. Remember a pellet grill does not have big giant gas burners that react to a simple knob twist. They need time to react, add some fuel, read, react, add some fuel, and so on. In cold weather it can take upward of 10-20 min to restabilize after a lid lift or messing around. That is valuable time I don't want to lose. When it's 90 in the shade, not so bad.
And old adage. "If you're lookin you ain't cookin"
On a pellet grill or other type of smoker it becomes WAY more important

Very true, every time you peek, the change in the internal atmosphere has to react. Don’t look, trust the process. It’s served me very well.
I’ll admit weather has been pretty decent here too! No deep concerns about smoking anything. Not going to happen this weekend, too much other household work to be done and I lost a day yesterday feeling the bottom of a birdcage!
 
Probes are sitting at 198 and 202. I was out there and checked it with my instant read a bit ago. And everything in in agreement. And it was already probing pretty smooth and silky. Gonna head out now. Give it another probe and I think she's gonna get wrapped and in the cooler for a couple of hours
