Prosciutto wrapped Asparagus

These can either be an appetizer or a side, or if you make enough, maybe even a main course.

The recipe is so simple I'm not sure it really qualifies as a "recipe", but the taste and ease of prep / cook makes it a winner for me.

Ingredients:
Asparagus Spears ( 4 to 20 per person)
Prosciutto, one half strip of prosciutto for each spear, I'll let you do the math.
Olive Oil Spray

Crumbled Goat Cheese for a garnish.

Prep:
Snap the thick ends off of the asparagus spears.
Cut a slice of prosciutto lengthwise
wrap and roll the prosciutto around the spear. a fairly snug wrap works best.
Put wrapped spear on a stainless steel rack suitable for going on the grill with a little space between each spear.
Spray with a light mist of olive oil. ( I do this outside at the grill )

Cook:
indirect, 400 to 450F for 8 to 10 minutes.

Serve:
with a generous amount of crumbled goat cheese.
 
Thanks for the inspiration Dan! I’ve done them before but it’s been a while. I’ve also made them as a cold appetizer with creamy horseradish sauce then wrapped in roast beef or ham and tied with a piece of chive. These were steamed but they’d be even better grilled.They’re always a big hit.
