By the time you get the thing cooked, you won't be able to tell the difference between choice and prime (if you can find a prime).
When I buy my briskets, they are called "choice or better". Forget what they are called, just try to find one with a thick, even flat, some specks of marbleing, and hard white fat and you'll do fine. Sometimes
you can find good briskets marked select.
