Practice Turkey on WSM

Hello All! I did a practice 12 lb turkey on the WSM last weekend and it came out great. I brined it using the Apple brine from here and turkey was juicy and delicious. I cooked it with some Apple and Hickory chunks around 350. I used a pan with a little chicken broth in the bottom to catch the turkey drippings to make the gravy and was surprised how flavorful the gravy turned out. The family said it tasted good and no changes needed to be made. We ate the turkey for Sunday dinner and used the leftovers to make Turkey and Sausage gumbo! Here is a before and after shot, sorry no plate pictures this time as I forgot when I was carving the turkey.
