Possible problem

I'm cooking two butts, total wieght 16.5 lb. I got them on the smoker at 7:30pm. I was riding 280. I stepped out for an hour with my wife and my temperature spiked, the lid thermometer was reading 350, not bad for high heat but I'm not doing high heat. I think I started the MM method with to many charcoals. At the time I started the smoker it was cool and raining out, thus the reason for additional charcoal. I've got the temperatur down to 250, I closed up all the vents and added water to the clay pot just to absorb some of the energy. It worked.

I got my thermapen out and my temperature was in the high 150's after 4 hours and the surface was beginning to get dark but not a good bark formation. I have wrapped the butts in foil hoping that it will not burn the exterior. I am currently at 178 on the smaller butt. At 250 how long do you think the plateau will last or how long will it take me to get to 195?

I normally cook butts at 250 and they take between 9 and 12 hours on average. I have a feeling this is going to get really early,with poor bark formation. My original plan was to have them done in 12 hours or 7:30am for my tailgate.

Butts got to 190ish at 330am, pulled them and wrapped in saran wrap and double foil and put in the cooler with towels. Just placed 12 bb racks on the smoker and added some more K. Looks like everything is turning out perfect. Going to bed. We'll so how the ribs are in 6 hours.
 
Good luck, Richard! I'm up at 5:30 to put some BB's on for a noon tailgate. I hope I'm awake during the game!
