Pork Steaks.

Mike, there are only 2 butcher shops in my area(sad), one is a latin food mart and he doesn't butcher pigs just orders in what sells and the other shop guys a jerk and steaks taste tough all the time, no mater what I do to them! There is a real good shop about 150 mile round trip from me that I go to a couple of times a year but when I go they don't seem to be cutting pork at the time. Pork is not real big down here. I mean the more different cuts. I'm used to Iowa chops, 2-3 inches thick! Down here there so thin they only got 1 side! LOL! When I ask them to cut me some thick ones they say why! Lol! Beef is king down here! I'm having a hard time finding pork belly. Going to have to order it, don't like having to order a piece of meat I'm not sure what it looks like before hand. Butcher shops and Farmers Markets are rare around here. People laugh at me when I head up north and come home with a suitcase full of Iowa corn and 20 lbs of pork!
I have heard that about Texas, I'd have a real tough time doing without my Farmers Market, and Iowa corn is great.

Usually go to Everett's in south Minneapolis. 38th Street and Cedar Ave S. Been going there for about 15 years or so now.

I'll have to stop there, heard its a good one, I've got Mikes Butcher shop on Robert Street here in W St.Paul, place is great, I've seen Matt Birk in there a couple times.
