Doing pork steak my way…..

Dry steak, dust with kosher salt, both sides. Let rest 3 to 4 hours.
Dry meat (rinse ok), apply Chipotle Tabasco, pepper, garlic powder.
Direct grill over medium high heat till cooked (Genesis II). I use the gasser because of the amount of smoke in the Tabasco. If you use charcoal, do not add wood.
Spread 1 to 2 tsp of butter onto steak, both sides.
Rest, then serve…..

Big favorite with the wife…..
