Pork Spares from Frozen ???

Hi All,

Any thoughts on pork spare ribs cooked from frozen? They actually won't be frozen solid but not fully thawed.

Ideas or tips?

James, I buy 3 racks of spares at a time in cryopak. If it is just the wife and I I freeze 2 racks. When thawed I treat them as usuall, they cook up nice. The only time I prefer fresh, unfrozen is for comp, but really I have not done a side by side test. Would be interesting to do a blinded test one previously frozen and on fresh, cooked the same.

Do them semi frozen a lot, If you have time make your rub without salt. Set the ribs out and salt them then set up your WSM. By this time the ribs should be sweating from the salt, then apply rub. After 1-2hrs if you don't like the way they look do as Kevin suggest and re-rub!
