Pork Shoulder Done? first time Smoker

Just a quick question, smoked 2 Pork Shoulders last night, been on 14 hours, internal temps for both are between 187-196 taken 6 spots each shoulder, went to pick them up and they are pretty much falling apart but bone is still does not slide out. can I wrap them and let them sit a few hours? just wonder why bone does not just slide out like so many talk about?
 
Hey Chris. If they are falling apart, you are most likely done. Probe in a couple places and make sure there is little to no resistance. The bone is very likely going to come out clean, but may be stuck by the crust that has formed. give it a twist and see how it goes. And yes, you can wrap them in foil, put them in a cooler with a tea towel over them and they will keep very well for a few hours.
 
Thanks Shane, wrapped them and they are covered with towels in the cooler while the beans finish in the dutch oven. pictures to follow
 
I've found the bone comes out easily at about 210deg. Target is 190deg for me but I tend to let it go longer now. I do however foil to try stop any drying out. I always learned 190deg was where to take pulled pork to, and since reading this forum have heard of many going longer to 210 or 215 for a softer result.
