Hi all - what general rules do you follow for how long meat can stay out before it needs to be refrigerated? I smoked picnic shoulders overnight and they came off the smoker at noon, rested on the counter until they were at 170, then I wrapped them in butcher paper and put them in a cooler. I plan on pulling them at 4:00, and my wife is taking the food to a festival with some friends to eat at 5.

Just wondering what guidelines you all follow. Thanks.
 
Sounds like your timing is right but I would not wrap in butcher paper for the cooler. I would double wrap in aluminum foil for that. Helps to keep them warm and you won't have any leakage onto the towels. Good Luck.
