Pork loin roast ideas?

I'm looking for ideas for a 5-bone, center cut pork loin roast that weighs about 3-1/3 pounds as I've never cooked this cut before. It has a little bit of a fat cap but it doesn't cover the entire top.

My initial thought involves a rotisserie and some apple wood but am open to suggestions. Thanks!
 
I'd leave the fat alone. I strongly recommend brining and cooking to 140. Rest tented.
