I've smoked several butts on my WSM with great results each time. I let some power through the stall and others I wrap to speed up the process so they get done quicker.
On Friday Night I put a butt on the smoker at 9:45 pm at about 230 degrees. At 3 am I woke up and went to check on it. The smoker was 211 degrees and the meat was 161. I went back to bed thinking it would be in a stall for a few hours so I left it but expected the temperature to rise but the time I got out of bed at 7.
When I checked on it again my smoker was 226 and the meet only rose to 164. From this point on the temperature slowly got up to 182 and that was it. The internal temperature would not go any higher. When I took the lid off the smoker the bone completely pulled out clean and the meat was very tender. At this point it was on there for 13.5 hours. I checked my maverick thermometer in ice water as well as another portable thermometer and it check out.
I always let the butt get to 195 and then probe it for tenderness before I remove it. Is this normal for the temp to stay as low as it did and still get great results? I always cook to temperature but removed this one because my fuel was just about out.
