Pork butt temperature drop

I put a 7 LB pork butt on around 8PM last night using the minion method for lighting. No problem at all through the night. Added water and about 1/2 chimney of lit briquettes, along with a rack of spares. Still no problem. Hit an internal temp of 190 and decided to baste the butt with apple juice and flip it. Upon flipping the internal temp dropped to 174 to 178 depending where I stuck the probe. The smoker is running a steady 225. No sure what to do. My gut tells me to do nothing and the reason it dropped so much is because I keep opening the lid to move the probe. Any advice? Foil it maybe? Sorry this is so long. Thanks. Joey
 
Do nothing. After an hour or so see what's happening temp-wise. If you don't believe the therm give the bone a twist and tug. If it's moving freely the butt is done.
