Pork butt rub duration

This weekend a friend is having a housewarming party and I offered to bring down the smoker an throw on some butts. I was curious if you can leave the rub on the pork butt for too long before making them. I was going to pick them up today and maybe do the rub late tonight. I'll probably start them on the smoker at midnight or so on Friday night.

I don't think there would be an issues with rubbing it tonight and not throwing it on for over 24 hours, but just wanted to check if anyone here thought there might be? I've done overnight rubs on these a bunch so I know that's fine.

Yeah - I noticed that too. More or less doing this so when we get back from the bars on Friday I have minimal work to do and I don't have to lug my spices around with me.

It will not hurt the Butt to season it well in advance but it is not going to offer any benefits other then time management. It surely will not penetrate the meat any deeper then it would if you wait until cooking time. I like to season my meat just prior to hitting the cooker. I believe it helps to form a better bark.

I rubbed 'em and then been delayed as much as 3 days before smoking them. The rub might get a bit moist and pull some moisture out of the meat but you can just top it up with the leftover rub or make a small batch if you want to. Doesn't really matter much, IMO.
