Pork Butt in the Rain!!

So, today we are having friends and their kids over for PP and fixings! But, today, not the best day for smoking:

At least until around 4 PM EST today, nothing but rain........ Oh well, first time for everything!!

Here is today's slab o' pork!

And today's setup is with pecan and apple wood with lump.

And onto the WSM and running away now:

Been on for about an hour now and had issues with temp already. Running at 250 F now, but went way down to 220 F and had to crank all my vents open. Still running full open. Not sure I am a fan of using lump on the WSM. But figured I would give it another go. Can say that I may go back to bricks when smoking and then use lump on the grill from now on though. Just seems easier to hold and maintain temps with bricks.

Anyway.....

See you in about 4-5 hours with an update and possibly foil time!!

Rain, especially if it is blowing around plays h@ll with a smoke sometimes. Good luck Derek you got a great start, looking forward to seeing the results
 
Bill - Ya, that's what I figured. WSM is under the deck, so just getting a few drops on it from run off. Not getting the direct down pour. So it's doing OK, so far. Just happy I had a window of no rain while I was getting everything up and running. Starting this thing in a down pour would not have been fun at all......
 
5 hours in and just checked the bark. Not quite there yet. Gonna give it another 30 minutes then wrap it up:

Sitting at 163 F internal and grate has been steady at 245-250 for the last 2 hours.

Rain has stopped - for now anyway......

Was very good. Excellent smoke flavour. Though I will say, this butt was a lot fattier than the last 2 I have done. Was a bit on the "too much fat" side even for me. My other half was not happy with it at all. I tried a butt from a different store this time. Don't think I will be going back for the butts. Though they do have excellent chickens and steaks. I think I am going to stick with the local farmers market selection, as it is much better IMO and way less fatty.

Chad - Yep! Gonna look into something along those lines when we put in the new deck next year. One on the house now is the crappy "builders" deck. It's only 10' x 12'.
 
Ah, I see. In the mean time.... Pick up a 10X12ish sized brown tarp and attach to the bottom joists. You'll wonder why you didn't do it sooner. :D
There's nothing like smoking & taking pics while it's raining knowing you're pretty much the only one doing so & staying dry.
Glad you have a plan in place to create your own little slice of Pigvillion. lol
