Pork butt in a bag

Has anyone tried the "butts in a bag" method on kcbs.com? It's on the home page when you go to their site. Looks like a time saver... put the butt in a double bag after 4 hours on the smoker, then put back in the WSM.

I wasn't sure if the total cook time was 5 hours (4 hours prior to bagging, then 1 additional after bagging) or 8-9 hours (4 hours prior to bagging, then 4-5 additional hours after bagging). Either way seems to be a time saver, and butt turns out great!
 
Can't locate the page. Please give a better link. That takes me to a TV station in CA? Is that correct? Or, you talkin' about the Kansas City BBQ Society?. Can't find it there either.

By the way, I've had my butt in a sling before, but never in a bag! /infopop/emoticons/icon_biggrin.gif
 
There is someone out there teaching cooking bbq in a brown paper bag. It is a technique that was used for offset cookers that were using logs as there only fuel supply. The idea is to put smoke on the meat for so long getting smoke, once the meats in the bag it will still cook but take on no more smoke.
Offsets move lots of air and smoke, a WSM is a different beast and this technique is not really needed because of the over smoking factor.

The article about the "butts in a bag!" is on the home page of www.kcbs.us (sorry, not kcbs.com), look on the lower right corner of the home page. It says they're using a Weber kettle to cook.

I think I'll send an e-mail to them for clarification.
