Visited my local Costco a couple days back and found this 9.5lb pork belly.
Took it out the freezer to thaw, seasoned with spg and paprika for color
Prepped the WSM for hot/fast temps in the neighborhood of 300. After 2 hours, pulled and wrapped in foil.
Probed it then back on till 208-210.
Sorry, no plated pics, but this was a small “slice” of heaven!
