Pork belly candy

After my failed experiment with cubing brisket flats I did some youtubing and saw a guy cook a pork belly.
I don’t want to call it “burnt ends” but let’s just say it looks like that kinda.

I am thinking I will give it a try.
My thoughts are do a fat trim but not overly.
Cube and rub.
Use my drip n skillet thing. It has like a cookie grate thing that I plan on using.
Build a rub for it. Any suggestions would be appreciated since I always like good ideas.
After the initial cook I’m going to glaze the meat and resmoke.
I want to finish the meat so it not to wet.

Thoughts and ideas would be appreciate.
