I have been asked to fix a BBQ dinner for my step son's wedding rehearsal dinner. This will take place away from my home so I transport my WSM and Kettle etc. Planning on a HH brisket and spares as the meats. I was thinking of doing a Hollywood cut on the ribs and using both flat and point of the brisket. Just wondering how many pounds of brisket I will need. Realizing about a 50% loss in weight from smoking. I'm thinking 2, 11-12pounders, and 2 ribs ea. Along with fixins, and Salmon that is being brought down from Alaska with the groom.
