Plateau

How long will a 10 pound pork butt sit at its plateau stage. The internal temp of the butt has been at 173 since about 7:30 A.M about two hrs now.

The lower the cook temp the slower the temp will rise.

Increase temps if you want it to get it moving.

The time at plateau varies each time. Don't worry about it too much. And don't get freaked out if the temperature drops some. I lost 3 degrees on the butt temp this weekend during my smoke (181 down to 178), even though the smoker temp stayed right at 220 (thanks Guru).
