Planning Cook #2

Did pork butts (2 five pounders) last sunday... turned out great... wish I had the time to do 2 more... But Life sometimes gets in the way of Smokin....

Planning on a cook for friday afternoon... Baby Back Ribs... been reading up on them... here are my thoughts
(any and all advice appreciated)

1) either 3/1/1 or 2/1/1
2) 3 chunks apple 1 hickory (thats all the kinds I got)
3) minion start wtih chamber about 2/3 full and 30 or so HOT BRIQ
4) Try to keep temps 250 to 275
5) FOIL with a lil apple juice/lil honey/lil brown sugar

QUESTION : lay foiled ribs flat on top rack (meat side down) or back in rib stand?????

6) pull from foil when tender to "tear test"... place flat on top grill and baste both sides with a doctored up sauce for about another 15-20 mintutes.....

through reading on pork butts read about baked beans (doctored up bushs) below the butts... sounds interesting....
 
Sounds like you have a solid game plan just remember the methods are guidelines. My method is cook until bark sets, foil until I have reached the desired tenderness and then remove foil and sauce for about 30 minutes. To answer your question once they are foiled you can simply stack them without messing with the rack. I always lay mine meat side up but meat side down might be better. Good luck and enjoy.
 
Cook #2 has officially begun.... 3 racks of baby back ribs.... put on at 1:40 pm.... Temps at 220 pm holding around 238 degrees... Also found a recipe for some doctored up Canned Baked Beans.... will be putting those on in a few as recipe said about 2.5 to 3 hours at 225 to 250....

ribs turned out a little on the dry side... obviously cooked them too long was trying to wait for wife to get home from work so probly on for about 40 minutes too long... the beans were good. a little too smoky.. will probly foil over top the beans after about an hour of soaking up the drippings and smoke flavor next time... actually the ribs and beans tasted better today as left overs....

Already planning cook #3... probly gonna be a couple of pork butts... the same way as cook #1 for Stillerz game next sunday... have the neighborhood over...
