I recently purchased a set of teflon coated pizza pans at wal-mart 7.97 these have small holes in the bottom. i used 2 fire bricks 1-1/2 wide and wrapped them in foil i then stood one on each side of the top grate standing upright on the longest end, this is to enable the pan to be raised above the grate where the temp is higher, i used store bought pizza dough and a jar of pizza sauce of couse you can use whatever you like, using 1lb of the dough i rolled it out on the pizza pan, the small holes in the pan help keep the dough from trying to shrink back also letting it rest between rolling helps a lot,i then added the sauce and on 1 half i added small pieces of raw hamberg on the other half i added pan fried sweet sausage pieces, then i added grated cheese, i used ro-lump for fuel putting it on one side of the kettle, after temp came up to 450f i put the pizza with the pan on top of the firebricks after 8 mins i rotated the pan. pizza took around 15 to 18mins to cook, it came out awesome with a lightly golden brown bottom and everything cooked on top, next time i will try cutting up the sausage into smaller pieces and putting them raw on top, IN MY HONEST OPINION i feel there is enough heat on the top of the pizza using this method to cook any small pieces of raw meat without burning the bottom, I came up with this method after reading all the wonderfull articles on this great website and not really seeing anyone use this type of method, give it a try i hope it works as well for you as it did for me.
